The Complete Functional Medicine Guide to Gluten Sensitivity, Autoimmunity, and Gut Health
By Dr. Scott | Total Health Center | Virginia Beach
If you’ve been told that all you need to do is stop eating bread to become “gluten-free,” you’re not alone.
For many people, eliminating wheat, barley, and rye leads to significant improvements in digestion, energy, and overall health. But for others, the story is very different.
They remove gluten.
They buy gluten-free products.
They follow the rules.
Yet they still struggle with:
- Bloating
- IBS
- Brain fog
- Fatigue
- Migraines
- Joint pain
- Skin issues
- Thyroid problems
- Autoimmune disease
Why?
Because gluten sensitivity is often far more complex than most people realize.
Welcome to Gluten University.
Why I Created Gluten University
After working with patients suffering from digestive disorders, autoimmune diseases, thyroid dysfunction, chronic inflammation, and unexplained health problems for nearly three decades, I have observed a common pattern:
Many people improve when they remove gluten.
But many do not fully recover.
In many cases, patients are told that if they simply avoid wheat, everything should improve. Unfortunately, that’s often not what happens in real life.
Some continue to struggle despite following a gluten-free diet for months or even years.
This led me to ask a deeper question:
What if gluten is only part of the story?
Gluten University was created to explore that question.
What You’ll Learn
This educational series examines gluten sensitivity from a functional medicine perspective.
We’ll discuss topics that are often overlooked, including:
- Why some people fail on a gluten-free diet
- Hidden sources of gluten exposure
- Cross-contamination
- Processed gluten-free foods
- Grain proteins beyond traditional gluten
- Oats, corn, and rice
- Gluten and autoimmune disease
- Gluten and thyroid health
- Gluten and neurological symptoms
- Gut healing strategies
- Nutritional deficiencies associated with gluten damage
Our goal is not to create fear around food.
Our goal is to help people understand why symptoms sometimes persist and what additional factors may need to be addressed for true healing to occur.
A Different Perspective on Gluten
Conventional discussions about gluten often focus on one diagnosis:
Celiac Disease
While celiac disease is important, it represents only one part of a much larger conversation.
Research continues to reveal complex relationships between grain proteins, immune function, intestinal health, neurological function, and autoimmune disease.
At Total Health Center, we take a broader view.
Rather than asking:
“Do you have celiac disease?”
We often ask:
“Could food be contributing to your symptoms?”
This question opens the door to a much deeper investigation of health.
